Position Summary: You will be cutting meat for our wholesale orders and retail case. You will also assist in making Steaks and Patties, as well as helping to cover our Retail Counter.
a. Customer service for you includes making sure the meat counter is full (know what sells best and fill accordingly) Make sure everything is rotated. The papers and the trays need to be changed. And the case needs to be spot cleaned regularly.
b. We want customers to be able to get any cut of meat they want. It is very important when you are cutting meat for a special order or for the counter, please be careful to cut it in a way that results in the minimum waste possible. Use every piece of primal cut you can, cut even and straight to avoid ends that are uneven. Trim tenderloins close to the skin and use every part of the tenderloin.
c. Customers come first. Helping the counter and customer service people is important. If people are waiting for service, wait on them.
